Summertime snacks are a must, but getting out of the pool can put a damper on your poolside fun. Having a handy recipe that can be prepaired next to the pool while swimmers enjoy the water can keep the fun going. That’s why we chose Caprese Chicken Sliders as one of our favorite poolside recipes. Caprese Chicken Sliders are an easy, light snack that make a great poolside appetizer when entertaining friends and loved ones.
Caprese Chicken Sliders
2 Chicken Breasts
3 Roma Tomatoes
Cut each chicken breast in to fourths and pound flat. Once the chicken is flat, place in a large plastic bag with olive oil and balsamic. Let the chicken marinate in the fridge at minimum for an hour.
Thinly slice your Roma Tomato, mozzarella and baguette then set aside.
Take your Balsamic Vinegar and reduce it. Grab a medium sauce pan and put over medium low heat. Apply 3/4 cup of balsamic vinegar and cook down until it reduces by half.
Remove the chicken from the fridge and grill on medium heat for 10 to 12 minutes, turning the breasts once. When turning the breasts over, apply cut tomato and mozzarella.
Toast your baguette slices if desired. Place chicken on slices of sourdough and drizzle with balsamic reduction, topping off with a sprinkle of basil. Enjoy!
