Poolside Recipes: Zucchini Pizza Bites


Pizza, as you know it, is about to get a whole lot better. Don’t judge this tasty dish by its main ingredient- this vegetable is nutritious and delicious! One cup of zucchini has 36 calories and 10% of the RDA of dietary fiber, which aids in digestion, prevents constipation, maintains low blood sugar, and curbs overeating.

  • 2 zucchinis
  • Arrabiata Sauce
  • 1 tablespoon of garlic powder
  • 1 tablespoon of dried oregano
  • Shredded Cheese
  • Cooking Oil
  • Desired toppings (onions, olives, pepperoni, etc…)



Step 1:

Turn on oven, broil, high

Step 2:

Lightly oil a baking tray

Step 3:

Cut your zucchini into small circles and place in oiled pan as shown


Step 4:

Apply your Arrabiata Sauce.

note: apply in small dabs with a spoon


Step 5:

Apply garlic powder and dried oregano seasonings to each zucchini slice


Step 6:

Apply your toppings: pepperoni, onion, olive etc along with shredded cheese.

Note: pinch the shredded cheese with fingers to keep cheese from falling off zucchini bites


Step 7:

Place baking sheet in the oven for 3-5 minutes and your done!
